Ingredients for Stuffed Poblano Peppers

To make delicious dish using poblano peppers, you’ll need the following ingredients:

4 large or medium poblano peppers

1 cup cooked quinoa or rice

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup diced tomatoes

1 cup shredded cheese (cheddar or Monterey Jack work well)

1/2 cup chopped onion

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro for garnish

Lime wedges for serving

Note: We took four large poblano peppers, but can take more and accordingly you have to increase the quantity of ingredients, also it will take a little bit more time to prepare this dish.

Roast the Poblano: We are using a direct flame of the stove to roast the poblano but you can use other methods as well. Wash the poblano peppers and let them dry, after dry, turn the gas stove burner at high flame, hold poblano peppers directly on the flame with a pair of tongs and turn around until skins become charred and tender.  

Once it is completely charred, leaving peppers to cool after that remove skins, seeds, stems and membranes.

Prepare the Filling: Now, it’s time to make the filling, heat a large skillet over medium heat and add a tablespoon of olive oil, add the chopped onion, garlic and cook until it becomes translucent, about 3 to 4 minutes. Add the ground turkey or beef and cook until browned. Instead of that you can also use vegetarian options like black beans or quinoa, and add them after the onions, tomatoes and garlic have cooked. 

Once it is cooked and the color becomes brown, mix in chili powder, cumin, salt and pepper to taste. Remove the skillet from heat and stir in 1 cup of shredded cheese until it melts and is well combined.

Stuff the Peppers: Carefully spoon the filling into each roasted poblano peppers, place the stuffed peppers back onto the baking sheet, sprinkle the remaining 1 cup of shredded cheese on the top of the stuffed peppers.

Bake the Stuffed Peppers: Preheat the oven to 350 degrees, and bake the stuffed peppers for about 15 to 20 minutes or until the cheese is melted and bubbly. Remove from the oven and let them cool slightly before serving. 

You can serve the stuffed poblano peppers hot with a side of rice, beans, or a fresh salad.
